DIRECTIONS
Step 1
Take 3/4 cups of rice, wash it thoroughly, keep it for soaking for about 30 minutes.
Step 2
Now grind soaked rice into coarse paste.
Step 3
Heat a pan, add 2 tbsp ghee, 1 litre of milk into it and let it boil.
Step 4
Add coarse rice paste into the milk.
Step 5
Stir the mixture at regular interval so that it does not stick to the pan.
Step 6
Once rice is cooked about 80%, add chopped dry fruits of your choice & a pinch of saffron strands.
Step 7
Add 3-4 tbsp of sugar, you can adjust it to as per your taste.
Step 8
Once the rice is cooked completely and mixture is of thick and pouring consistency, switch off the gas and let the phirni cool to room temperature.
Step 9
Add 2 cups of mango pulp into the phirni and mix it well.
Step 10
Finally garnish it with chopped dry fruits and refrigerate for some time before serving.
